Topaz apple
Topaz
The Topaz is a medium sized apple, the result of a hybrid of the "Rubin" and “Vanda” varieties. It has a smooth peel with a yellow base colour, often with large red or orange-red stripes. The pulp is crisp and creamy. The taste of the Topaz is juicy and acidic and is described as "crisp and crunchy."

Martin Schuster, apple farmer from Vetzan/Vezzano, about the Topaz
Topaz is a scab-resistant variety. For this reason, the apple is particularly popular in organic cultivation. Topaz has a more pointed acidity than the Granny Smith and is very easy to recognise visually due to its particularly flat shape.
